Brian Lizotte has blazed the Australian native foods trail
for the past 20 years. Initally, trying to meet the requests
of large overseas act's for truly Australian Food while touring,
they discovered that Native Australian ingredients had become
commercially available and dived in with great enthusiasm.
From giving lemon myrtle tea to singers such as Tina Turner,
and Janet Jackson as a 'throat tonic' they graduated to banquets
with an array of unique flavours for over 200 band and crew
on the Billy Joel and Elton John Tour of Australia in 1998.
they left our shores having experienced, and greatly enjoyed,
true Aussie cuisine flavoured with our native ingredients.
Brian has continued to introduce a wide variety of native
ingredients into his menu's with a great deal of success and
believes that Australian native flavours are here to stay,
making it into the mainstream with their aromatic, tasty and
flavoursome qualities.

The range of foods collected from Australia's outback, rainforest
and arid lands can be made into easy to prepare cuisine.
Some examples are ...
* Warrigal Greens - the native equivalent to English spinach
* Lemon Aspen - the small tangy yellow fruit is found in rainforests
and is as versatile as the traditional lemon
* Wattleseed - a tempting coffee-chocolate-hazelnut flavour
for hot beverages or desserts, eg pavlova, pastries, pancakes,
bread or ice-cream
* Lemon Myrtle - the leaves and stems from the tree have a
strong citrus flavour
Interest in the cultivation of Australian native plants as
a source of food has increased rapidly in recent years, corresponding
